Menu Plan Monday

I need to go to the store tonight or tomorrow night. Tonight we are having baked talapia, fresh green beans, and rice.

I don't have anything planned for the rest of the week yet. So, let's play a game ...  I will cook the FIRST FIVE SUGGESTED MEALS left in a comment on this post.

Rules: It has to be healthy-ish, it has to be kid friendly-ish, it has to be easy-ish, and you have to leave a recipe, of sorts.

Now, give it to me!

  1. My friend Michele suggested Tacos or taco salad with ground turkey and homemade salsa, with loads of veggies. (I accidentally deleted the comment). Great suggestion, Michele! This is one of our family's favorites, and it's definitely on our list this week!

  2. Stuffed peppers (for adults)~ Red bells stuffed with ground turkey/rice/pasta sauce mixture and stuffed pepper casserole for kids ~ stuffing mixture with very finely chopped red peppers topped with cheese

  3. Spaghetti with whole wheat garlic bread and italian green beans (frozen long green beans, minced garlic drizzled w. olive oil)

    You could add turkey meatballs if you want. Then have meatball subs or meatball calzones another night

  4. How about build your own pizza night, with tons of veggie topping options on store bought whole grain flatbread crusts? Add a salad for even more veggies. My kids like Alfredo sauce with tomato slices, bacon bits, and chives
