What to do with all the produce

I don't can any of the produce from my garden. My garden really isn't big enough to store up harvest for the winter months. But, some veggies get too plentiful to keep up with sometimes. My zucchini and squash are plentiful, to the say the least. So are my jalapenos!

I mentioned in my post yesterday that I had made Jalapeno Poppers. Here is a picture of them. My goodness they were delicious!


With shredded zucchini I made some Oatmeal Raisin Zucchini Cookies yesterday. They were fabulous and won't be lasting long!


Tonight I am planning on making Squashamole (like guacamole .. no, I won't be squashing a mole). You use grilled zucchini, squash and onions and mix them together like guacamole with some other ingredients. If they turn out good, I'll share the recipe.

I will also be taking these bad boys to my dad this weekend (the zucchini, not the kids, although the kids are going to see my dad this weekend, but they aren't bad ... anyway), along with some jalapenos.


Did you notice that cute carrot? They still aren't quite ready, but Brynne and I saw some orange poking out of the ground and we were too impatient not to pull one out and see how they were doing. (And, yeah, yesterday was p.j. day.)

Yummy, fun times!

  1. Ha...squashing a mole! Wow, your garden is doing so good. We planted ours late. Strawberries are the only thing we have brought in yet. I love your ideas because, yes squash and jalapenos are plentiful. I've wanted to try the poppers for a while and now you have convinced me. Yummo!
